Spaghetti & Meatballs

A staple found at every Italian’s Sunday dinner table is spaghetti and meatballs. Like many, I grew up attending church on Sundays with the family and then heading over to nonna’s house for lunch. Lunch on Sundays always consisted of pasta and meatballs and everyone gathered around the table enjoying a meal together.

I have fond memories of waking up on a Sunday morning to the sound of meat sizzling in oil and the aroma of fresh homemade tomato sauce boiling on the stove, along with the smell of garlic and fresh herbs.

The secret to the Sunday staple is of course the meatballs and the sauce. Our homemade pasta sauce is cooked down to be a thicker consistency, which I personally love.  Additionally, the practice of sauteing the meat prior to adding the sauce, takes it to the flavour to the next level.

And as for the meatballs…. The key ingredient is pork which makes the meatballs savoury and moist. Check out the recipe below to master your spaghetti and meatballs dinner next Sunday.

Recipe:

  • In a large pot heat thin layer of oil, sautee the onions add beef stew
  • When beef stew is brown add jar of tomato
  • Season with 4 basil leaves, teaspoon garlic, add salt and pepper to taste
  • Cook on medium for 2-3 hours

Meatballs:

  • In a large bowl mix 2lbs of ground pork
  • Add a cup of breadcrumbs
  • Add a cup of parmesan cheese
  • Add chopped basil 4 leaves
  • Add 3 eggs
  • Add tablespoon of tomato sauce
  • 3/4 of a tub of ricotta (optional – some family members include this while others don’t. All personal preference but I certainly love the ricotta addition).
  • Mix together with hands and roll into medium size balls
  • Test one meatball by placing it into the sauce – remove after 10-12 minutes and test that it doesn’t fall apart, it should stay firm as formed
  • If all is good, place remaining meatballs in the sauce and cook 10-12 minutes

Boil water for pasta, add the sauce, remove meatballs and serve!

    OMG YES! i’m pretty sure i wake up to sizzling garlic and ground beef to this day on sundays, lol! aND LUNCH ON SUNDAYS AT NONNA’S IS MY FAVOURITE MEMORY – EXCEPT WE ALWAYS HAD A MORTADELLA/PROSCIUTTO/PANINI SPREAD – SOMETHING ‘LIGHT’ LOL!
